Green Tomato Mincemeat - cooking recipe

Ingredients
    2 qt. chopped (not ground) green tomatoes
    1 Tbsp. salt
    2 1/2 qt. pared, chopped apples
    1 lb. raisins
    1 1/2 c. chopped suet
    3 1/2 c. sugar (brown)
    1/2 c. vinegar
    2 tsp. cinnamon
    1 tsp. nutmeg
    1 tsp. cloves
    1/2 tsp. ground ginger
    1 orange, grate rind and chop pulp (optional)
Preparation
    Sprinkle salt over tomatoes and let set 1 hour; drain.
    Cover with boiling water and let set 5 minutes.
    Drain well.
    Mix remaining ingredients and cook until mixture is boiling hot.
    Put into jars and leave 1-inch headspace.
    Put on lids and rings. Process 25 minutes at 10 pounds pressure or 2 hours in hot water bath.
