Sweet Potato Pie - cooking recipe
Ingredients

1 unbaked pie shell
1/2 lb. fresh sweet potatoes, boiled, drained and peeled
3/4 c. packed dark brown sugar
1/4 c. butter or margarine, at room temperature
3 large eggs
1/3 c. light corn syrup
1/3 c. milk
2 tsp. freshly grated lemon peel
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. ground nutmeg
Preparation

Heat oven to 425\u00b0.
Press bottom and sides of unbaked shell with fork.
Bake 8 to 10 minutes until dry.
Remove to rack.
Put potatoes in medium bowl.
Break up with electric mixer; add sugar and butter.
Beat until well blended and smooth.
Add remaining ingredients.
Spread in pans.
Bake 10 minutes.
Reduce oven to 325\u00b0.
Bake 40 to 45 minutes until pick comes out clean.
Cool in pan or on wire rack.
