Hot Potato Salad With Bacon - cooking recipe

Ingredients
    2 lb. boiling potatoes
    6 slices bacon
    oil
    1 scallion
    3 Tbsp. red wine vinegar
    salt and pepper
Preparation
    Cook potatoes until tender.
    Drain.
    When cool to touch, peel and cut into chunks.
    Cook bacon until crisp.
    Drain on paper towels and crumble.
    Measure bacon fat and add oil to make 1/2 cup and return to pan.
    Slice scallion and cook in fat until softened. Add vinegar, 1 teaspoon salt and 1/2 teaspoon pepper.
    Bring to boil and cook 1 minute.
    Immediately pour the entire contents of pan over potatoes and toss to coat.
    Add crumbled bacon.
    Add salt and pepper to taste.
    Serves 4 to 6.
