Eggplant Fritters - cooking recipe

Ingredients
    1 medium eggplant
    1/2 c. flour (self-rising)
    1 egg
    1 medium onion, chopped
    salt
    vegetable oil
Preparation
    Peel eggplant and cube; cook eggplant and onion in boiling salted water until tender.
    Drain and mash.
    Beat egg; blend in flour, eggplant and salt.
    Drop by teaspoon in hot oil, turning to brown.
