Curry Lentils And Rice - cooking recipe

Ingredients
    1 onion, diced
    1 bell pepper, diced
    1/4 c. olive oil
    1 c. brown rice (or mixture of wild and brown)
    1 1/2 Tbsp. mustard
    1 1/2 c. lentils
    28 oz. can tomatoes or 4 fresh tomatoes, diced
    2 cloves garlic, minced
    1 1/2 tsp. curry powder
    cayenne to taste
    coriander to taste
    salt and pepper to taste
    8 c. water
Preparation
    Saute onion, bell pepper and garlic in oil for 2 to 3 minutes. Add rice and stir until rice is coated.
    Add mustard and stir. Add rest of ingredients, except water.
    Stir; add water.
    Simmer about 2 hours, check water level occasionally; add more water if mixture is too thick.
    Simmer longer if too watery.
