Ingredients

1 c. crushed graham crackers
2 eggs
1/2 c. sugar
1 tsp. lemon rind
3 Tbsp. lemon juice
1 c. whipping cream
Preparation

Beat egg yolks with beater, adding sugar.
Beat (in double boiler) over boiling water until thick, about 3 minutes.
Remove; add rind and juice.
Beat egg whites until stiff and fold in first mixture.
Whip cream and fold all together.
Line tray with wax paper.
Sprinkle half of crumbs on bottom.
Pour in mixture and put remaining crumbs on top.
Freeze at least 3 hours.
