Chicken Rice Chu-Chu(A Tex-Mex Style Casserole) - cooking recipe
Ingredients

1 Tbsp. olive oil
1/2 lb. mushrooms, sliced
1/8 tsp. each: dried basil and parsley
1 whole chicken breast, skinned, boned and cut into 1-inch pieces
3 scallions (including green tops), chopped
salt and fresh ground pepper to taste
2 cloves garlic, minced
1/2 c. dry white wine or apple juice
1/2 tsp. each: ground cumin, chili powder and dried oregano
1 1/2 c. tomatoes or V-8 juice (according to taste)
3 1/2 c. cooked rice
1/2 c. each: nonfat yogurt and skim evaporated milk
1 (4 oz.) size can whole green chilies
1/2 c. each: grated or shredded, part-skim milk Mozzarella cheese and a reduced fat cheese of choice, such as Swiss, Cheddar, Monterey Jack or Colby
Preparation

In a large skillet, saute the scallion, garlic and chicken in the oil until the pink is gone from the chicken.
Add the mushrooms, wine, herbs and seasonings.
Cook until the liquid is reduced.
