South Of The Border Fettucini With Grilled Chicken And Black Beans - cooking recipe

Ingredients
    4 Tbsp. butter
    1 c. crushed fresh tomatoes
    1/2 c. canned black beans
    1 c. chopped cilantro leaves (found in produce section)
    1 Tbsp. minced jalapeno
    1/2 Tbsp. minced garlic
    2 1/2 c. diced grilled chicken breast
    2 oz. or 1/4 c. white wine
    2 oz. or 1/4 c. chicken stock
    8 oz. fettucini noodles
Preparation
    Heat 4 tablespoons butter.
    Add tomatoes, beans, cilantro leaves, jalapeno and garlic.
    Saute 3 to 5 minutes.
    Pour off all but 1 tablespoon of fat.
    Add grilled chicken and wine; simmer. Add chicken stock and simmer until reduced by 1/4.
    Salt and pepper.
    Bring large pot of water to boiling.
    Drop pasta (fettucini) in and cook 3 minutes.
    Drain.
    Top with sauce. Serves 2 to 4.
