Ingredients

1 qt. strawberries
2/3 c. water
1 c. sugar
3 Tbsp. cornstarch
1/3 c. water
3 oz. cream cheese, softened (optional)
Preparation

Wash, drain and hull 1 quart strawberries.
Simmer together about 3 minutes 1 cup strawberries and 2/3 cup water.
Blend sugar, cornstarch and 1/3 cup water; add to boiling mixture.
Boil 1 minute, stirring constantly.
Cool.
If desired, spread cream cheese on bottom of cooled baked pie shell.
Save out 1/2 cup choice berries for garnish.
Put remaining 2 1/2 cups berries in baked pie shell.
Cover with cooked mixture and garnish with the 1/2 cup berries.
Refrigerate until firm, about 2 hours.
