Mom'S Potato Candy - cooking recipe

Ingredients
    1 small potato (the size of an egg)
    1 lb. box confectioners sugar
    peanut butter
Preparation
    Boil the potato until completely cooked. When done, while potato is hot, peel and mash it in a bowl.
    Add confectioners sugar and knead. Roll it thin on waxed paper.
    Spread a thin layer of peanut butter over entire circle of potato mixture.
    Roll it up in jelly roll fashion. With waxed paper around it, chill 30 minutes. Slice and store in airtight container.
