New England Apple Cake - cooking recipe
Ingredients

1 stick margarine
1 c. sugar
1 c. brown sugar
3 eggs
2 tsp. vanilla
2 1/4 c. all-purpose flour
2 1/4 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
7 c. coarsely chopped cooking apples (about 7 medium)
3/4 c. walnuts or pecans
Preparation

Preheat oven to 350\u00b0.
In a large bowl, cream together margarine and both sugars. Beat in eggs and vanilla until well blended.
In a medium bowl, combine next 5 ingredients. Add to creamed mixture.
Stir to combine thoroughly.
Stir in apples and nuts.
Spoon into a greased 10-inch Bundt pan or 3 medium size loaf pans.
Bake 50 to 60 minutes or until an inserted toothpick comes out almost clean (because of the apples, the toothpick will be moist).
When cooled, can dust with confectioners sugar.
Be sure to refrigerate any leftovers.
Serves 16.
