Boyd'S Chicken Special - cooking recipe

Ingredients
    1 c. whole chicken, cut up
    1 c. white cooking sherry
    1 c. celery, diced
    1 c. onion, diced
    1 c. bell pepper, diced
    1 c. carrots, diced
    1/2 c. fresh thyme
    1/2 c. garlic, diced
    1/2 c. water
    1/2 Tbsp. oregano
    1/2 Tbsp. black pepper
    1/2 Tbsp. cayenne pepper
Preparation
    In large mixing bowl, add chicken, cooking sherry, celery, carrots, onion, bell pepper and garlic.
    Mix together and let marinate overnight in the refrigerator.
    One hour before cooking, take the bowl out of the refrigerator and add the remaining ingredients.
    Let sit for 30 minutes and put in a large, deep baking dish or pan.
    Bake in 400\u00b0 oven until chicken is tender. Serve with rice or pasta.
