Rhubarb Pecan Muffins - cooking recipe
Ingredients

2 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 1/4 c. finely chopped rhubarb
1 tsp. salt
3/4 c. pecans, chopped
1 egg
1/4 c. vegetable oil
2 tsp. grated orange peel
3/4 c. orange juice
Preparation

In large bowl, combine flour, sugar, baking powder, soda, salt and nuts.
In another bowl, combine egg, oil, orange peel and orange juice.
Add to dry ingredients all at once.
Stir until moistened.
Stir in rhubarb.
Put in muffin pans.
Bake at 375\u00b0 for 25 to 30 minutes.
