Chicken With Parsley Sauce And Broccoli With Lemon Butter - cooking recipe

Ingredients
    1 broiler-fryer (2 1/2 lb.), cut up
    salt and pepper to taste
    1/4 c. butter or margarine
    1/4 c. fresh bread crumbs (1/2 slice bread)
    2 Tbsp. minced shallots
    2 small cloves garlic, minced
    2 Tbsp. minced parsley
Preparation
    Season chicken with salt and pepper.
    Melt butter in broiler-proof baking dish large enough to hold chicken in single layer.
    Turn chicken in butter to coat.
    Arrange skin side down in baking dish; broil in preheated broiler about 6 inches from heat source for 5 minutes.
    Remove from broiler and turn skin side up. Return to broiler about 5 minutes.
    Mix remaining ingredients. Sprinkle evenly over chicken; baste well with butter.
    Bake in 400\u00b0 oven for 10 minutes or until tender.
    Just before serving, reheat broiler.
    Place chicken briefly under broiler to brown. Makes 4 servings.
