Sweet-Sour Pork Roast - cooking recipe

1 (3 1/2 to 4 lb.) pork roast
salt
pepper to taste
1 (8 oz.) can tomato sauce
1/2 c. water
1 tsp. grated lemon rind
2 Tbsp. brown sugar
1/2 tsp. nutmeg or allspice
1 (No. 2) can pineapple chunks
1/2 c. seedless raisins
Preparation

Sprinkle the pork roast with salt and pepper to taste; place in a baking pan.
Roast at 325\u00b0 for 1 hour; pour off excess fat. Combine the tomato sauce, lemon juice, water, grated rind, 1/2 teaspoon salt, brown sugar and nutmeg in a saucepan.
Drain the pineapple chunks; pour over the roast.
Roast for about 2 hours, basting occasionally and adding water, if needed.
Makes 6 servings.
