Mulligan Stew(Serves 6) - cooking recipe

Ingredients
    1 tbsp. vegetable oil
    3 cooked and diced bacon strips (optional)
    3 medium onions, sliced
    1 1/2 lb. fresh or frozen fillets, thawed (cod, Halibut, etc.)
    1 qt. boiling water
    3 large carrots, pared and diced
    1 (6 oz.) can tomato paste
    1 1/2 lb. potatoes, pared and cubed
    1/2 c. diced celery or 1/2 tsp. celery seed
    4 tsp. salt or salt substitute
    1/4 tsp. black pepper
    1 c. diced green pepper
    1 (28 oz.) can tomatoes (3 1/2 c.)
Preparation
    Heat oil in Dutch oven or kettle.
    Add onions and saute until tender.
    Slice fish in 1 to 2-inch pieces.
    Add fish and remaining ingredients to onions.
    Cover and simmer 25 minutes or until vegetables are tender.
    Garnish with parsley and bacon (if used).
