Shrimp Pilaf - cooking recipe

Ingredients
    1/2 lb. bacon, diced
    2 c. onion, chopped
    1/2 c. long grain rice
    3 c. chicken broth
    4 medium tomatoes, chopped
    2 Tbsp. lemon juice
    1 tsp. black pepper, ground
    1/4 tsp. red pepper, ground
    2 lb. medium sized shrimp
Preparation
    In a large heavy pot over medium heat, cook bacon until crisp; remove from pan and set aside (reserving 1 tablespoon of fat).
    In the same skillet, cook onion in reserved fat until tender.
    Stir in rice, broth, tomatoes, lemon juice and pepper; heat to a boil. Cover; reduce heat and simmer 25 minutes or until rice is done. Stir in shrimp and bacon; cook until shrimp is done, about 5 minutes.
    Makes 8 servings.
