Ratatouille - cooking recipe

Ingredients
    2 to 3 cloves garlic, minced
    2 to 3 onions, sliced or diced
    2 to 3 peppers, sliced or diced
    1 whole eggplant
    2 to 3 small zucchini
    1 pt. mushrooms
    1 can crushed tomatoes
Preparation
    Peel and cube zucchini and eggplant.
    Place in salt water overnight.
    Saute garlic, onions and peppers in a small amount of oil.
    Add the rest of the ingredients and allow to simmer for an hour or two.
    Serve alone as soup or over pasta as sauce.
