Mini Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1/2 tsp. salt
    1 egg
    1 can Hunt's tomato sauce
    1/2 tsp. Italian seasoning
    1 can Durkee fried onions
    6 small potatoes, sliced thin
    1 bag frozen broccoli, corn and red peppers, thawed
Preparation
    Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can fried onions.
    Make 3 small meat loaves; place in 9 x 13-inch baking dish.
    Place potatoes around loaves. Bake covered at 375\u00b0 for 35 minutes.
    Place vegetables around loaves and mix with potatoes; add remaining tomato sauce to loaves.
    Salt and pepper.
    Bake 15 minutes uncovered; add remaining fried onions and bake 5 more minutes.
