Oatmeal Raisin Bread Pudding - cooking recipe

8 Snackwell's reduced fat crunchy oatmeal raisin cookies, coarsely chopped
1 large baking apple, cored and chopped
2 c. skim milk
3/4 c. Egg Beaters 100% real egg product
1/4 c. firmly packed light brown sugar
1 tsp. vanilla extract
prepared light whipped topping (for garnish)
Preparation

In a greased 1 1/2-quart casserole, combine cookies and apple; set aside.
In small bowl, blend milk, egg product, brown sugar and vanilla.
Pour over cookie mixture; let stand for 5 minutes. Cover; bake at 375\u00b0 for 30 minutes.
Remove cover; bake for 10 to 15 minutes, or until set.
Cool slightly.
Serve warm or cold with whipped topping, if desired.
