Moo Goo Gai Pan - cooking recipe

Ingredients
    4 large chicken breasts, boned
    salt and pepper to taste
    1 Tbsp. sherry cooking wine
    1 Tbsp. cornstarch
    24 snow peas (frozen or fresh)
    1 Tbsp. salt
    12 sliced fresh mushrooms
    2 stalks celery, sliced
    12 water chestnuts, sliced
    1 clove garlic, sliced
    2 spring onions, sliced
    2 tsp. soy sauce
    1/2 tsp. sugar
Preparation
    Slice chicken in 1/2-inch squares.
    Mix with salt, pepper, cooking wine and cornstarch; set aside.
    Heat 2 tablespoons peanut oil and add salt, saute snow peas, mushrooms, celery and water chestnuts for 2 minutes.
    Remove from pan and fry garlic, chicken and onion for 1 minute (on high heat).
    Add soy sauce and sugar; mix well.
    Add cooked vegetables.
    Mix well and cook for 1 minute. Remove and serve over rice.
