Stir-Fry Vegetables And Rice - cooking recipe

Ingredients
    1 c. fresh snow peas
    2 to 3 Tbsp. oil
    1/2 c. bias cut carrots
    4 green onions, bias cut about 1-inch long
    1 small green pepper, chopped
    1 small clove garlic, minced
    1 c. sliced fresh mushrooms
    1 Tbsp. soy sauce
    1/2 c. rice
    1 c. water
Preparation
    Bring water and rice to a boil. Simmer for 20 minutes. Heat 1 tablespoon oil in skillet. Add carrots and stir-fry 2 minutes. Add 2 onions, green peppers and garlic. Stir-fry 2 minutes more. Add oil if needed. Add mushrooms, pea pods and cooked rice. Cook 2 to 3 minutes. Stir in soy sauce and serve.
