Corn Relish(Serving Size: 4) - cooking recipe

Ingredients
    2 (17 oz.) cans whole kernel corn
    1 (4 oz.) jar diced pimiento, drained
    1 small green pepper, chopped
    2 Tbsp. vegetable oil
    1/2 c. sugar
    1/2 c. vinegar
    2 tsp. onion, minced
    1/4 tsp. celery seed
    1/8 tsp. salt
Preparation
    Combine first 4 ingredients; then combine remaining ingredients in a saucepan and bring to a boil.
    Cover, reduce heat and simmer 2 minutes.
    Pour vinegar mixture over vegetables.
    Toss them.
    Chill for 2 hours.
    Makes 4 cups.
