Ed'S Stuff - cooking recipe
Ingredients

2 T. safflower oil
1 lb. boneless chicken breasts
1 jar thick and chunky picante sauce
Tortilla chips
Monterey jack cheese, shredded
Cheddar cheese, grated
Mozzarella cheese, grated
Preparation

Cut chicken breasts into bite sized pieces. Heat 2 tablespoons oil in skillet. Cook chicken until done. Pour picante sauce into hot skillet and cook uncovered 2 to 3 minutes to thicken. Place tortilla chips on a microwave safe plate, spoon chicken mixture on chips, sprinkle with cheeses. Heat in microwave on high for 30 seconds or until cheese is melted.
