Eggplant Gourmet Style - cooking recipe

Ingredients
    1 medium eggplant, cut into 8 parts (leave on skins)
    1 c. oil (oil of your choice)
    1 c. tomato sauce
    2 Tbsp. butter or margarine
    3 Tbsp. grated Parmesan cheese
Preparation
    Cut eggplant
    into
    8 parts lengthwise and fry in olive oil until brown
    and
    tender,
    about 10 minutes for each part. Place tomato
    sauce in casserole.
    Add eggplant; sprinkle well with cheese.
    Dot with butter and bake in moderate oven (375\u00b0) 15 minutes.
    Serves 4.
