Three Fruit Rice Salad(Sugar-Free) - cooking recipe

Ingredients
    3 Tbsp. orange juice
    1 1/2 Tbsp. vegetable oil
    1 tsp. lemon juice
    1 tsp. sugar substitute
    3/4 tsp. chopped fresh mint leaves or 1/4 tsp. dried mint
    1/2 tsp. each: poppy seed and grated orange peel
    1 c. cooked Uncle Ben's converted rice
    3/4 c. small cantaloupe balls
    1/2 c. each: sliced strawberries and pineapple chunks
Preparation
    Combine first 4 ingredients.
    Add mint, poppy seed and orange peel.
    Mix well.
    Stir dressing into rice.
    Cover and chill several hours.
    To serve, stir in fruits.
    Makes 2 servings.
