Shredded Carrot Salad - cooking recipe

Ingredients
    4 c. grated carrots (1 to 1 1/2 lb.)
    1 tsp. salt
    1/4 tsp. freshly ground pepper
    2 Tbsp. red wine vinegar
    7 Tbsp. olive oil
    3 Tbsp. fresh lemon juice (about 1/2 lemon)
Preparation
    Wash and peel carrots.
    Grate using large holes of a hand grater or the grating disc of a food processor.
    Put into large bowl.
    Sprinkle with salt and pepper.
    Add remaining ingredients in order listed.
    Toss until well blended.
    Cover and refrigerate until ready to serve.
