Ingredients

3 medium red potatoes
1/2 medium onion
1 egg
1/4 c. plain bread crumbs
1 Tbsp. parsley
1 tsp. salt
1/8 tsp. pepper
vegetable oil
Preparation

Peel potatoes and cut into small chunks.
Cut onion in half. Put onion and egg in blender.
Blend on \"grate\" setting for 20 seconds.
With blender still running drop pieces of potato into blender.
Blend about 20 seconds after last piece of potato is added.
Transfer mixture to a bowl.
Add bread crumbs, salt, pepper and parsley.
Stir.
