Chicken Enchiladas - cooking recipe

2 cans green chili
1 roasting chicken
12 oz. shredded Cheddar cheese
1 can black olives, sliced
1 Tbsp. cumin
corn tortillas
Preparation

Boil chicken until thoroughly cooked.
Remove meat from bones. Place chicken meat in bowl and sprinkle with cumin.
Heat green chili in frying pan, just until warm.
Moisten tortillas in green chili.
Place approximately 3 spoonfuls of chicken in a tortilla and roll up.
Place rolled tortilla in 9 x 13-inch pan.
Repeat until pan is full, about 12 to 14 tortillas.
Pour remaining green chili over top.
Cover with cheese and olives.
Cover pan with foil.
Bake at 350\u00b0 for 20 to 30 minutes.
Serve with chopped tomatoes and/or sour cream.
