Oven Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1/2 c. milk
    flour
    margarine or butter
    salt and pepper to taste
Preparation
    Pare and slice eggplant into 1/2-inch slices.
    Salt and pepper to taste, if desired.
    (Salt may be omitted for low salt diet.) Dip in milk, then roll in flour.
    Place on baking sheet and bake in 375\u00b0 oven until crisp, turning once.
    Remove from oven and spread margarine on each slice while still hot, if desired.
