Roast Duckling With Normandy Sauce - cooking recipe

Ingredients
    2 ducklings
    1 c. apple juice
    2 Tbsp. brandy
    2 Tbsp. butter
    3 Tbsp. brown sugar
    1 Tbsp. cornstarch
    1/4 tsp. nutmeg
    1/8 tsp. ground cloves
    1/8 tsp. salt
Preparation
    Sprinkle duckling body cavity with salt.
    Place duckling, breast side up, on rack in shallow baking pan.
    Prick skin all over with sharp fork or knife; truss.
    Roast in preheated 350\u00b0 oven about forty minutes per pound or until duckling is tender and a deep brown.
    Baste with Normandy Sauce last 30 minutes of roasting time.
    Serves 4 to 8.
