P.O.T. Casserole (Potatoes, Onions, Tomatoes) - cooking recipe
Ingredients

2 lb. white potatoes, sliced thin
1 medium onion, sliced thin or diced
1/2 tsp. oregano
1 1/2 tsp. salt
1/2 tsp. parsley flakes
margarine
1 c. shredded Cheddar cheese
1 large or 2 medium fresh tomatoes
Preparation

In 2 or 3-quart casserole, either layer or mix potatoes and onion. As you layer, sprinkle with oregano, salt and parsley. Dot with margarine. Slice tomatoes thin. Place on top of potato and onion mixture. Cover with plastic wrap. Punch 1 hole in center of plastic wrap. Microwave on High for 20 minutes. Check for tenderness. Sprinkle Cheddar cheese on top of tomatoes. Cover with plastic wrap. Let set 6 to 8 minutes before serving.
