Sweet Potatoes With Bourbon And Walnuts - cooking recipe

Ingredients
    10 to 12 sweet potatoes (about 4 1/2 lb.), baked in jackets 40 to 60 minutes or until soft or 3 (18 oz. each) vacuum-packed sweet potatoes, drained
    3/4 c. plus 2 Tbsp. butter or margarine
    1/3 to 1/2 c. bourbon
    1/2 tsp. salt
    1/2 c. coarsely chopped walnuts or pecans
Preparation
    Cut cooked potatoes in half and scoop out pulp (about 8 cups) into large bowl of electric mixer.
    Beat at medium speed until smooth.
