Crispy Oven Fried Mexican Chicken - cooking recipe

Ingredients
    1 c. V-8 juice
    1/4 tsp. hot sauce
    2 lb. skinned chicken parts
    2 oz. Cheddar cheese, shredded
    1 1/2 oz. corn flake crumbs
    1 tsp. chili powder
    1 tsp. cumin
    1 tsp. each paprika, salt, pepper and barbecue spice
Preparation
    Combine V-8 and hot sauce.
    Add chicken parts and marinate for 30 minutes at room temperature.
    Drain chicken and discard marinade.
    In a large plastic bag, combine remaining ingredients. Coat each piece of chicken and place in a baking pan that has been sprayed with Pam.
    Sprinkle remaining crumb mixture over chicken. Bake 1 hour at 350\u00b0.
    Makes 4 servings.
    Equals:
    3 proteins, 1/2 ounce hard cheese, 1/2 bread.
