Spanish Rice - cooking recipe

Ingredients
    1/4 c. salad oil
    1 c. rice
    1 diced onion
    2 stalks diced celery
    1 diced green pepper
    mushrooms, if desired
    1 can tomatoes
    1 can water
    salt to taste
Preparation
    Heat salad oil and add rice.
    Stir until brown.
    Add onion, celery, pepper and mushrooms and cook for approximately 5 minutes with rice.
    Add tomatoes, can of water and salt; cook, covered, until all water is absorbed and rice is soft.
    Serve hot.
