Mexican Rice - cooking recipe

Ingredients
    1 1/2 c. regular rice
    1 clove garlic, chopped
    1/4 c. chopped onion
    1/4 tsp. cumin
    1 1/2 tsp. salt
    1/2 to 3/4 c. chopped tomato
    3 c. chicken broth or water
    5 Tbsp. oil
Preparation
    Heat oil until very hot in a heavy pan.
    Add rice; brown slightly, stirring constantly. Add garlic, onion, cumin, salt, tomato and broth or water. Bring to a boil. Reduce to low heat and cook 45 minutes or until rice is tender.
