Pickle Beets - cooking recipe
Ingredients

6 1/2 lb. beets
3 c. cider vinegar
4 or 5 c. white sugar
mixed spices
Preparation

Cook beets.
Leave 2 inches of top stems while cooking.
When beets are clean from all dirt, boil about 20 minutes to 1 hour, according to size, until tender.
Drain off and use cold water to cool enough to peel.
When peeled, put in clean pot.
Add vinegar, sugar and spices.
If vinegar is too strong, add a little water. Heat to simmer.
Pack in hot jars; seal.
Should make 6 pints.
