Golden Meatball Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1/2 c. bread crumbs
    1 egg
    1 tsp. salt
    all-purpose oil
    2 c. water
    1 c. uncooked rice
    2 large carrots, cut in quarters
    1/2 c. chopped green pepper
    1/4 c. chopped onion
    1/2 lb. Velveeta cheese, cubed
Preparation
    Combine meat, bread crumbs, egg and salt; mix lightly.
    Shape into meatballs; brown in small amount of oil on all sides in large skillet, drain.
    Add water, rice, carrots, green pepper and onion. Cover and simmer 25 minutes.
    Add Velveeta cheese.
    Heat until cheese melts.
    Yields 4 to 6 servings.
