Salmon With Potato "Scales" - cooking recipe

Ingredients
    1/3 lb. mushrooms, chopped
    1 small onion, minced
    1 clove garlic, minced
    2 tsp. tomato paste, dissolved in 1/2 c. dry red wine
    2 medium Yukon Gold potatoes
    1 1/4 lb. salmon fillet, skin removed
    olive oil or butter
    2 Tbsp. chopped parsley
Preparation
    Saute onion and garlic in a little oil or butter until soft. Add mushrooms and cook until most of the mushroom liquid has evaporated.
    Add wine mixture and reduce by half.
    Salt and pepper to taste.
