Ingredients

3/4 c. cold mashed potatoes
4 c. shredded coconut
1 lb. powdered sugar
1 tsp. almond extract
1 (12 oz.) bag chocolate or butterscotch chips
Preparation

Combine all ingredients except chips and chill the mixture until firm.
Form into 1-inch balls.
Dip these balls into melted chocolate or butterscotch chips and let harden on waxed paper.
