Ingredients

2/3 c. regular rice
2 1/4 c. water
2/3 c. sugar
2 tsp. cornstarch
1/2 tsp. salt
3 c. half and half
2 Tbsp. butter
1 tsp. vanilla
2 eggs
1/2 c. raisins
Preparation

In medium saucepan bring rice and water to a boil.
Simmer covered until rice is tender (about 25 minutes).
In small bowl stir together sugar, cornstarch and salt.
Stir into hot rice with half and half.
Stirring constantly bring to a boil and boil for 1 full minute.
Add butter and vanilla.
In a small bowl slightly beat eggs.
Into this gradually stir in 1 cup hot rice mixture. Gradually stir this back into the remaining rice.
Stir often until mixture bubbles.
Let stand at room temperature until cool.
Serves 6 to 8.
