Quick Pickled Cucumbers - cooking recipe

Ingredients
    1/2 c. white vinegar
    1/4 c. sugar
    1 1/2 tsp. crushed red pepper
    8 cucumbers (about 2 lb.)
    1 medium sized carrot
Preparation
    About 4 1/2 hours before serving or a day ahead, in a 13 x 9-inch glass baking dish, stir together vinegar, sugar, salt and crushed red pepper.
    Cut each unpeeled cucumber lengthwise into 6 wedges.
    Place in baking dish with marinade.
    Peel carrot and cut crosswise in half; cut each half lengthwise into matchstick-thin strips.
    Place carrots in baking dish with cucumbers; toss to coat.
    Cover and refrigerate at least 4 hours, stirring occasionally.
