Mabel'S Chicken A La King - cooking recipe
Ingredients

3 Tbsp. salt free butter
1 bell pepper, shredded
1/2 c. celery, chopped
1 small can mushrooms
1 small onion, grated
3 Tbsp. flour
2 c. milk
3 c. cold, diced chicken
2 egg yolks, beaten with 1/4 c. milk
few drop lemon juice
pepper and paprika to taste
salt if desired
1 small can green peas
Preparation

Melt butter and add bell pepper, celery and mushrooms.
Cook 3 or 4 minutes.
Add grated onion and flour, mixed with part of the milk and then the remaining milk.
Stir until thickened and add the chicken and remaining milk with egg yolks beaten in.
Cook a few minutes longer, stirring constantly.
Add a few drops of lemon juice and the seasonings.
Stir in the green peas.
Serve in patty shells or on toast!
Serves 6 to 8.
