Frozen Lemon Bisque - cooking recipe

Ingredients
    2 eggs, separated
    1 tall can evaporated milk, chilled
    juice of 3 lemons
    grated rind of 1 lemon
    1 c. sugar
    2 c. graham crackers
Preparation
    Whip whites stiff with 1/4 cup sugar. Beat yolks with juice of 2 lemons. Add 3/4 cup sugar, pinch of salt and grated rind. Fold all together and spread in a 9 x 13 Pyrex in which is spread 1 cup graham cracker crumbs. Sprinkle 1 cup crumbs on top. Freeze. Optional: Top with Cool Whip or cherries to serve.
