Potato Cakes - cooking recipe
Ingredients

8 to 12 c. onions
1 large stainless pot of water (approximately 2 gal. water)
1 c. parsley
1/2 c. salt
1 c. potato mix (French's or Trio)
1 qt. milk
Preparation

Mix all the ingredients together and form a small cake (pat between hands) and fry.
If batter appears too thick, add more water a little at a time.
This is served at the Kutztown Folk Festival.
Eat with butter or gravy.
Makes 2 1/2 gallons.
