German Farmers Breakfast - cooking recipe

Ingredients
    3 slices bacon, cut into small pieces
    1 medium onion, chopped
    2 medium potatoes, cubed and cooked
    salt and pepper
    1 tsp. parsley
    4 beaten eggs
    green pepper, tomatoes (peeled) and peas (optional)
Preparation
    Fry bacon.
    Cook onion in fat until tender.
    Stir in cooked potatoes and cook until golden.
    Combine bacon, parsley, eggs, salt and pepper.
    Mix well.
    Pour egg mixture over potato-onion. Cook over low heat until eggs are set.
    While cooking, slip a knife underneath to let wet mixture run under.
    Flip over (cut first).
    Add optional vegetables just before flipping.
    When cooked, cut in wedges.
