Baked Macaroni And Cheese Casserole - cooking recipe

Ingredients
    1 1/2 c. uncooked elbow macaroni
    1/4 c. margarine
    1 small onion, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 c. flour
    1 3/4 c. milk
    10 oz. Velveeta cheese, cut into 1/2-inch cubes
Preparation
    Have macaroni cooking while preparing cheese sauce.
    Cook and stir margarine, onion, salt and pepper in a 3-quart pot until onion is slightly tender.
    Blend in flour, cook over low heat, stirring constantly, until mixture is smooth and bubbly.
    Stir in milk; heat to boiling, stirring constantly.
    Boil and stir 1 minute; remove from heat.
    Stir in cheese until melted.
    Add cooked macaroni. Stir well.
    Place in 2-quart casserole.
    Cook, uncovered, in 375\u00b0 oven for 30 minutes.
    Should be slightly brown.
    It's fun to slice up about 5 hot dogs and add to casserole before baking.
