Cheesy Potato Surprise - cooking recipe
Ingredients

6 medium potatoes
1 tsp. vegetable oil
3 Tbsp. Italian bread crumbs
1 Tbsp. olive oil
1/2 c. 2% milk
1 egg
1 Tbsp. tomato paste
2 large garlic cloves, minced
1/2 c. Parmesan
1/2 c. grated Mozzarella or Cheddar cheese
1/2 c. or to taste extra bread crumbs
Preparation

Cut potatoes into chunks and boil until tender.
Preheat oven to 350\u00b0.
Take 1 teaspoon oil and oil 9 x 12 x 1-inch pan. Sprinkle pan with bread crumbs.
Drain potatoes and in large bowl add olive oil and mash potatoes.
Add milk, egg, tomato paste and garlic.
Stir in cheese.
Place in 9 x 12 x 1-inch (or so) pan, making it as level as possible.
Sprinkle extra bread crumbs across top to make crust.
Bake 40 minutes.
Cool 15.
This is an excellent variation of mashed potatoes.
