Grilled Chicken Caesar Salad - cooking recipe
Ingredients

2 to 3 boneless chicken breasts
2 heads romaine lettuce
2 1/2 c. croutons
1 small Egg Beaters or 2 raw eggs
1 can flat anchovies
1 to 2 cloves fresh garlic
1 c. light olive oil
1/2 c. grated Parmesan or Locatelli cheese
1 tsp. regular mustard (Dijon for spicy touch)
1 tsp. lemon juice
1 tsp. Worcestershire sauce
Preparation

Grill chicken.
Slice cooled chicken into strips and set aside.
Wash lettuce in cold water and dry thoroughly.
Combine anchovies, Egg Beaters, garlic, mustard, oil, lemon juice and Worcestershire sauce in blender (set on \"blend\").
When mixture is whipped into a froth, toss on salad greens.
Add croutons, cheese and chicken.
When ready to serve, fresh mushrooms and 1/2 cup finely shredded red cabbage may be added for presentation.
