Dove In Sauce - cooking recipe
Ingredients

8 doves, cleaned
2 c. tomato juice
6 slices bacon, diced
1 stick butter or margarine
1 c. diced onion
2 cloves garlic, minced
1 bay leaf
1/4 tsp. thyme
1 small can mushrooms, undrained
3 Tbsp. flour
Preparation

Place doves in saucepan with tomato juice; cover and simmer slowly for 30 minutes.
Remove doves; reserve liquid.
Place diced bacon and margarine in flame-proof casserole; heat until hot.
Add onions and saute until golden.
Add birds, garlic, thyme, bay leaf and mushrooms.
Stir to brown, then add tomato juice and cooking liquid.
Cover and simmer slowly until meat is tender, about 1 hour.
Remove birds to a warm serving platter.
Thicken sauce with flour.
Pour over doves and serve.
